Relationships,
Social Dynamics,
Situational things going on around you,
Current events,
The person(s) you are talking to, people naturally like to talk about themselves when given an opportunity to do so.
Anything that gets people into a positive state, thoughtful state, imaginative state or conjurs up a good debate.

Try and avoid closed questions or anything that can lower a persons state such as political or religious topics, unless you find a girl who happens to be passionate about such topics.

Good topics are things that stir up imagination and lead on to other fun topics.

What's the craziest thing you've ever done?
I wanna buy an exotic animal, what shall I get?
Who's better, boys or girls?
Search the forums for loads more and some good methods of picking topics

The weather or how about kanye west being a pillock lol - only joking. It is hard to say really depending on the situation you in. Day game or night game? It can be anything. I like to talk about all the different cocktails if I'm in a cocktail bar. My fav opener is "that looks tasty, what is it?".......if I'm in a club, "do you like this kinda music" so talk about the music. Personally the topic of conversation relates to your surroundings....if you run out of things to say, there are a few threads in the forum for ideas. Sorry would love to give you the links but my phone is being gay right now........

As K dog says if you try and tailor your conversation to her and what you think she'll be interested in you're going to sound rehearsed and fake. It's not the real you coming through so just be confident and waffle about any shit that comes into your head or you find interesting. It's more about how you do it than what you say, she'll find it more attractive and refreshing that you're not trying to impress her or put her on a pedestal like every other guy that talks to her.
