Either way, for me personally, I would say if she is just being off it's not really worth your effort, there are plenty more fish... etc.
However, if what you hear through the grapevine is true about a bad previous relationship and self esteem issues, then maybe you could both benefit from you just being straight with her, and telling her what you really think of her. You think she is a nice person, etc, tell her so. Reassure her your not just about the physical etc (unless you are!).
Be careful though, this sounds a lot like oneitis (obsession with 1 woman, putting her on an impossibly high pedstal) to me!
