First Post - New Girl, but no idea

I have just started a new job. About three weeks ago, before starting a shift, this HB8 that I did my induction with came in a little early and sat in front of the bar. We started chatting and I very confidently asked if she had a boyfriend. She said she did and asked me why, and I said 'because I think you're really pretty but I would like to go for coffee and get to know you better' she seemed flattered but disappointed. Then about 15 minutes later after she had started her shift, my manager came down from the office and, to my surprise, said to her 'Hey ..., have you split up with your boyfriend yet?' Turns out she had found him on tinder blah blah etc etc
I didn't engage in that conversation, but heard the whole thing, and she knew I did, I said afterward 'I still want to go out sometime'

About a week later, they had split up and I have tried to get her to go on eyeing dates with me but once she was ill (which I did see btw) and another she had to look after her grandad while he was awaiting an operation.

Since then we have had phone sex (she got really turned on while I told her what to do with her hands) but I cannot get her to meet up with me so I can physically escalate, there's loads of playful touching, hitting and sex talk in work but I can't seem to get her to agree to meet with me outside of work.

I need help guys.
